• From the vineyard to the cellar
From pruning to harvest the seasons follow succeeding providing us with new challenges to accept. The pruning is when our experienced team begins to anticipate what the furure harvest will bring.
Spring will then reveal the fruits of working with vigourous vine shoots, a homogenous flowering and formation of bunches well spread out all along the vine canes. Each stage of the vegetative evolution will be carefully followed up in the vineyard with either manual or mecanical labour (debudding, tying up, trimming, deleafing, vine shoots selection, green harvest, etc.). It is the result of all this care in the vineyard that will give us a harvest of a healthy and perfectly technologically and phenologically matured crop.

• The happy atmosphere of the harvest is the start of the meticulous work in the cellar. Bin after bin, grapes are carried out at the cellar, sorted out, crushed and spred out into the different vats. We make our wines using traditional methods, with more or less long pre fermentation according to the quality of the vintage, with pumping overs and delestages during the alcoholic fermentation, under temperature control, and with more or less long post maceration at 30°C. Our aims : obtain fine wines, elegant, round and supple, with intense and complexe aromas, showing the character of our best terroirs.

• Our wines will then start a twelve months ageing period, which brings balance and elegance to the wines. This ageing period will take place either in stainless steel tanks and concrete vats, such as for Château Chéreau and Château Vieux Moulins de Chéreau, maintaining the freshness of the fruit aromas and the roundness of the grape’s tanins, or in oak barrels, such as for the Domaine de la Pointe and the Egérie du Château Chéreau. In that case the barrels come from different coopers, made out of french oak only, to provide richness, roundness, and subtile vanilla and coffee tinges, which would slowly melt with fruity flavors to increase the complexity and the harmony of the wines.
